There is nothing sensual about confit unless you like to cover yourself is spent duck fat and dance around like that guy from silence of the lambs It puts the duck fat on the meat and slow cooks it for hours or it gets the hose again Anyway if you want to learn the "sensual" art to confit then this book will help tremendously.
