A few basic ingredients elevate a bland albeit useful pantry staple into the secret flavor boost that pumps up everything from simple soups to complex casseroles. I need this on those freezing nights when you can't crowbar me from the house and my pitiful larder consists of a couple of chunks of cooked chicken, a handful of noodles or tortellini and a hunk of day-old bread.

Little else is required for chicken noodle soup or tortellini in wine broth. Or "Tuscan Soup Bowl" - a coarse hunk of toasted bread drizzled with olive oil and topped with a ladle of hot broth. Garlic, canned tomato, cloves, a bay leaf, dried basil, an onion - are things you already have. Start simple and build from there is the mantra.

Either way, it's nice to have options. This book has had many great recipes. They all seem to be geared toward actually being able to cook them on a weeknight. Most seem to take about an hour and everyone that I have cooked has been absolutely delicious. There are also a whole bunch of little side notes and stories about different food topics. I even like to read the opinions and boy, are there some opinions voiced in the book. The reader may not always agree but at least the opinions are well backed up. I would recommend this book to anyone who loves food and loves to eat.

Buy it and give it to your friends.
