I did brush the top with melted butter and sprinkle with sesame seeds before baking, though, not in the recipe. With that, the loaf looked as good as a bakery loaf. Since the beginner's loaf is that good, I am ready to move on to the more advanced recipes.

I had not baked home-made yeast bread for about 30 years, and had forgotten all I knew, so this looks like the perfect new starting point. Whether you have never baked a loaf or have years of experience at baking bread, this book has something for you. You start by actually baking bread,then go into the the how and why things work the way they do. The book is a good but not very good primer.

The concepts are reasonably discussed but some key points such as critical measures and ratios are inconsistent. The recipes do not use a constant weight for how much a cup of bread flour weighs for instance. It wasn't expensive and for a new baker it's a decent start. If you can spend more buy a better book. This is still how I make my best breads. I do some no knead breads but they don't turn out nearly as well as these recipes. I get to work out on the dough, and it feels great!

Well written easy to follow directions. I am very critical about my breads and critique every loaf. This book is quite good. Have this on my e-reader and re-read it before making the bread. Works great that way, this book was cheap price and worth every penney. Back to basics, good bread, good information, and the author did a super job.

Why spend lots when this book does the job. This information within was just what I needed to make perfect bread. This is a no-frills book which lacks that extra character that I've come to love about great cookbooks.

I would have liked to see more recipes but that said those that were included were good choices. The bread information is good and it works. He editing is poor. Needs photographs in the correct location and needs more photos of the bread being described. Bread books need to be about making bread, not soup and salad. See all 34 reviews. You can shape and cook your bread first thing in the morning, shaving off resting time.

The fastest loaf I've made Paul, was a 3mins loaf. It's a Telegraph recipe, for a decent enough spelt bread. I make it with sourdough starter and it works a treat. Complain about this comment Comment number 1.

I usually do my baking at the weekends I know it does not sound very scientific, but it works for me! I freeze bread quite a lot--maybe I bake an extra loaf or half dozen rolls and then stick them in the freezer. That way, I always have a little glut! Complain about this comment Comment number 3. I'm good at pastry and cakes and biscuits - I'd be a whizz at the Bake Off prog, until the bread, this week. I might give your recipe a go. The last time I made bread, it was with a seven year old. The fact that it took so long and had stages made it perfect as an activity - weighing mixing, rising and again.. However, the result was terrible!
